Recipe: Red Wine Sweet Potatoes

Yesterday's post was a little tough for me. I'm one of those, "it's extremely hard to express any emotion and I never should" kind of gals. For those who emailed and commented - I cannot even express how thankful I am to have readers like you and how amazing you all are! Within seconds my mood was completely uplifted. Thank you for your words! There are so many things that are going on - it is crazy to think I can plan exactly how the following months will turn out. On the upside, we got our engagement photos! Now, lets get to the real reason you clicked to view this post....Start drooling everyone. This recipe is Amazing! A few weeks ago Chet and I went to Olive Garden, one of our favorites....have I ever mentioned are are chain restaurant junkies? Any who, They have a limited time red wine squash. It was to die for! I left completely craving more and decided to invent my own recipe. I present to you today, Red Wine Sweet Potatoes with Brown Sugar. Yes. it is fabulous and Yes. It is super easy!

Red Wine Sweet Potatoes
2 servings
1 sweet potato
2 tablespoon of butter
1 tablespoon of red wine (dry)
1 tablespoon of brown sugar
1 teaspoon rosemary

Directions
Preheat oven to 400 degrees Fahrenheit. Cut sweet potato and place in a small casserole dish. Add 2 tablespoon of butter (slightly melted), 1 tablespoon of red wine, sprinkle 1 tablespoon of brown sugar and 1 teaspoon of rosemary. Heat for 30 minutes and then remove from oven. Let cool about 3 minutes and serve.


So easy and SO delicious!! I've made this a few times already and LOVE it more every time. The combination of brown sugar and wine is to die for! I hope you enjoy!!
